I use a variation of this technique. Tapping the blade as you show works well, but that can be too agressive at times, advancing the blade too quickly. Instead, I will tap the handles on the bench. This allows for a more subtle adjustment, and advances the side you tapped more than the other to allow adjustment of your offset. Also, you can retract the blade by simply flipping the shave over and tapping the back side of the handle. Works great.
